Hello. It’s been a terrible week. But if you have the chance this weekend, it’s time to clean the grill or plant one in the park, it’s time to mix lemonade and sweet tea, marinated chickenbuy hot dogs and sausages, cook Cakes for transport and generally to prepare you for the unofficial start of the barbecue and barbecue season. We have all recipes you need for this Memorial Day weekend and beyond.

But it starts in earnest on Saturday, as far as I’m concerned. Tonight I would like to take advantage of Latest news from J. Kenji López-Alt for The Times and consider using fried shallots for its Caesar salad with fried shallotshis spaghetti aglio e olio and fried shallots or, most likely, his watermelon salad with fried shallots and fish sauce (above).

Kenji has a recipe for the fried shallots themselves, but feel no pressure to do so. He actually prefers that you buy them ready-made from an Asian supermarket. “It’s a convenient, cost-effective move that can infuse so many dishes with flavor and crunch,” he wrote.

Tomorrow we will tackle the summer kitchen and, I hope, eating out a lot. I like this spicy clam dip for that, barbecue chicken (with a simple bbq sauce), this sweet and tangy Broccoli salad, coleslaw with miso vinaigrette and one pineapple upside-down cake for dessert.

What a lede: “Watching Kai Lenny surf at Pe’ahi, a big-wave spot off the north coast of Maui, is mildly breathtaking. You may have seen it on video, but that doesn’t prepare you for the speed, the impossible confidence, of a sharp turn at the top of a huge wave, often right into the bright turquoise window of a lip about to sway—for that abrupt return downward, as if he wanted the weightless fall of the downcarve more than he wanted to make it out in one piece. When I first saw him in the back of a Jet Ski in February, I involuntarily yelped. These things are not done, or at least they were not. (Here is the video.)

I dig Grace D. Li’s first thriller, “Portrait of a thief.”

The Kids in the Hallway: Comic Punkson Amazon Prime? Yes please.

Finally, here’s a new poem by AE Stallings in the London Review of Books, “The sieve.” Consider it, and I’ll see you on Sunday.
