Ucross, located on a ranch in northeastern Wyoming, is home to an artist residency program founded in 1983 and has inspired the likes of poet and performer Karma Mayet Johnson, journalist and novelist Suki Kim, and baritone Nathan Gunn. , among others. Their stays at the ranch were punctuated by meals from the kitchen of Cindy Brooks, who, along with former resident Cree LeFavour, has now written “The Ucross Cookbook.” (Sales support the association.) To prepare, the caramelized carrots with ras-el-hanout; hard soup with winter spinach; soba noodles with coconut, peppers and kale; and Powder River meatballs. The ‘Poet’s Lunch’ peanut butter cookies were a big hit, and I was thrilled to see someone next to me was simmering jasmine rice in jasmine tea. Recipes don’t provide yields, though the authors say to assume about six servings for many. Experienced cooks would not be discouraged. Testimonials from former residents and attractive landscape photos adorn the pages of the book.
