Hello. Greetings from seclusion on this last day of what has been a troubling and not much fun year for many. There will be no champagne and caviar for me tonight, no elegant roasting, no countdown to 2022. I could. tying flies, To listen an old show by Ry Cooder. Quarantine and tests, this is auld lang syne.

I hope this is not the case for you. Hope you are safe and happy in the embrace of your family or friends, have a great plan to celebrate safely, maybe you will look in the fridge and can whip this up Dutch baby with bacon and flowing camembert cheese (above) eat with cocktails, before something big for dinner and waiting for the ball to fall.

To say, honey glazed chicken with shallots? Or Creamy Seared Scallops with Fresh Tomatoes? With braised kale anyway, and a Lisbon chocolate cake for dessert?

And then for the morning, the first of the year, how about eggnog overnight French toast? Or, if you prefer a savory starter, fried eggs, baked bacon and perfect hash browns?

And then to follow to dinner, black-eyed peas and greens? Kayla Stewart explored the tradition to cook them for The Times recently, with recipes for green cabbage and cornmeal balls, and for black-eyed peas with rice.

But maybe not. Maybe you, like many like me, have been caught up in the spread of the omicron variant and find yourself isolated with those you live with or on your own, and wondering if a peanut butter sandwich could be. the best option for this evening (on hot toast, with crispy chili and pickles), or if a baked potato could be more festive (fully loaded, please!).

I took out some pork chops from the freezer the other day – a beautiful traditional pork, red and marbled with fat, from an animal that took yoga and read poetry and only got a bad day in her life – and I got to see my way pork chops with onion sauce this evening. There will be enough meat left for a pork chop po ‘boy on New Years Day, the meat cut off the bone and heated in the remaining sauce, to put a grilled hero roll with cold grated iceberg lettuce and a few spoonfuls of hot sauce. I live big.

It’s old-fashioned travel writing of the kind you don’t see very often these days, but Ben Lerwill’s visit to Devon, on the south-east coast of Great Britain, for National Geographic, introduced me to the term cabotage, which looks pretty cool.
