There are people who collapse on the couch after Thanksgiving and don’t get up for hours, if not days. And then there are the people who treat the whole holiday weekend like a baking and baking marathon, using Leftovers and rotate directly into baking cookies. We have recipes for both camps below: quite simple and light dinners to make things easier, as well as a slightly more complex leftover recipe than microwaving everything, for keen cooks. Impress the Gen Zers in your life by making this recipe, aka feta pasta which went viral on TikTok. This recipe involved cooking cherry tomatoes and feta, then mixing them with boiled pasta. Melissa Clark streamlines it by baking pasta right in this casserole in the oven.

This simple and gorgeous Ali Slagle dish is perfect for the week after Thanksgiving: the brash sparkle of orange and grapefruit is a nice turn-around from the stuffing and potatoes. It’s also quite fun to do for all the family or friends who hang out.

This recipe from Kay Chun is another slight winner after Thanksgiving. It showcases the soft tofu, which steams over the bok choy; a ginger-tahini sauce ties it all together, for a beautifully simple meal. Prepare a pot of rice to accompany it if you wish.

Last year on Hanukkah first night I made these Joan Nathan latkes and served them for dinner with smoked salmon and sour cream on top and a salad on the side. It was great. The “pure” in the name refers to the absence of other ingredients: these are made up only of potatoes, salt and pepper. This is one of the best uses for leftover Thanksgiving turkey I’ve seen: a game of pho gà, the classic Vietnamese chicken soup, by Samin Nosrat. The fragrant broth, chewy noodles and fresh herbs are a heaven together. If you did turkey broth, this is the right place to use it.
