What to Cook This Weekend

Good morning. Obviously you’re deep in preparation for Father’s Day, America’s most important holiday, when you’ll give dear old dad his annual tie adorned with harps and shamrocks, and ply him on Sunday morning with fancy French toast (above), glazed bacon and Vietnamese iced coffee.

I kind of half-kid. Maybe your father’s gone, recently or a long time ago. Maybe he’s lame, and that came up recently or maybe it has always been the case. Maybe this is one of those weird, complicated holidays that it’s not always wise to celebrate. Maybe you should just go fishing on Sunday, or put in tomatoes, or take a long meandering walk through the Frick. Feel no pressure at all, save perhaps that to cook well, and for someone.

Me, I’d like these deviled chicken thighs for dinner tonight, with a pile of watercress and the last bowl of mashed potatoes until October.

I’d like to drink a gallon of watermelon smoothies in the morning. (The recipe is for one smoothie, which isn’t enough. Quadruple it and omit the sugar, you’ll be on the right road.)

On Saturday I’d also like to smoke a duck the way I learned to do in South Texas. (Serve it with warm tortillas, this crazytown chipotle mayonnaise and a bunch of pickleback slaw.) Have strawberry fool for dessert.

Then on Sunday, I’d like to make scallion pancakes with squid to start, and have some Korean fried chicken afterward, with rice, lots of lettuce, some kimchi and a cold, cold beer. For dessert, navel oranges straight from the fridge, cut into wedges, served in a pile in the middle of the table. (Fetch the tie, children! Present the bag of athletic socks, the card with the pun!)

Other things to cook this weekend: Samin Nosrat’s excellent new recipe for steamed sweet potatoes, perfection in an orange jacket, courtesy of the food writer Carla Lalli Music. Grilled marinated tofu. Steamed mussels with tomatoes and chorizo. The world’s best chocolate cake.

I’m looking forward to all of it. I hope you are, too. But if none of my ideas intrigue, thousands of other recipes that might are waiting for you at NYT Cooking. Vicky Ho of the Anchorage Daily News spent six days in Denali National Park and Preserve, climbing and skiing and digging and exploring at Root Canal Glacier. She came back with a good read for the paper, with photographs that are just bananas.
